Avocado and Kale Pesto
I love this dish! Its so easy and so so delicious!
Take a fresh ripe avocado and place it in a bullet or blender
Add a few glugs of olive oil
Salt, black pepper
A handful of fresh kale
Pumpkin seeds (about a quarter cup)
This time I used Follow Your Heart brand Parmesan (about a quarter cup). Normally I use Nutritional yeast. It's just as good, (maybe better) and add lots of B vitamins and protien to the dish (use half the amount). You can also use cashew or almond parm. YUM
Half a lemon squeeze
Now blend till its creamy!
When its all creamy and blended add to your favorite organic brown rice, quinoa pasta or zoodles!
