Coconut Red Lentil Goodness
I made this while I was craving Dahl, which is an Indian red lentil stew. This tastes exatly the same! Even better then I remembered! This dish is the perfect blend of protien and healthy fats. Also it's healing: pain relieving, anti aging, skin clearing, soul warming and metabolism boosting. It's extremly easy to make and you'll definitely be hooked!
What you'll need *all organic*:
2 cups of red lentils
3 cups of water
1/2 of an onion- chopped
3 garlic cloves
1/4 teaspoon cayenne pepper
1/4 teaspoon powdered turmeric
A can of coconut cream
First, smash the garlic cloves and sauté them in a pot with sea salt.
Once they turn a bit golden add the chopped onion. When the onion is see through add the lentils (rinsed)
Then add the 2 cups water. Leave that uncovered until it starts to boil.
Now add in the spices. I love it a little spicy so I add a tad more of the cayenne. If you are sensitive to spice use just a splash.
Next cover the lentils and let them cook on low until the water is absorbed. About 20-25 minutes.
Once the water is absorbed or close to it I add in the coconut cream and let it sit until that is absorbed. About 10-15 minutes.
Give it a taste test and add more salt or any spices you think it needs. At this point I usually add more salt.
**If the lentils are soft and creamy, and the taste is perfect then its done!
The consistency should be almost like it was blended in a blender. Totally smooth.
Some stoves cook faster or slower than others so keep your eye on it instead of just setting a timer.
I topped mine with a dollop more of coconut cream, cayenne, black pepper and fresh parsley. Cilantro would be a nice topper as well. All of this is totally optional!
I also paired it with some raw pumpkin seeds which I sprinkled a bit as I ate.
