Organic Tofu Scramble
Who doesn't love a tofu scramble?! Even if you don't love tofu you will love this!
**I'm putting this up here by popular demand!**
What you'll need:
1 block of Organic Firm Tofu ( make sure it's organic, trust me)
Sea Salt
Nutritional Yeast- optional, but makes a big difference in flavor and nutritional value (protein and B-vitamins)
Turmeric
Crushed Black Pepper
Start out by draining the water from the tofu. Place the tofu on a cutting board and slice into blocks. Smash those blocks with a wooden spatula or whatever you personally like to smash with.
Next pour organic olive oil or vegan butter into a pan with the smashed tofu
Cook the tofu while adding 1\2 teaspoon sea salt
1\4 teaspoon of turmeric
2 tablespoons of nutritional yeast, or more
Black pepper
Mix all of these ingredients while mashing the tofu until the color is an even light-yellow.
At this point it should look just like scrambled eggs!
*this is a good time to add any veggies to the scramble, such as diced tomatoes, choppped broccoli, peppers or any veggie you like. In this batch, I added just some fresh parsley, but I usually make it plain.
Cook for about 10-15 minutes on low-med heat. I like to add more nutritionl yeast as it cooks, and maybe a bit more salt to taste.
Then its done!
I love eating this in a taco shell, a purple cabbage leaf or some organic Veganic bread, chilaquiles or anyway really!
