Peas Party Pasta
Organic peas and pasta (quinoa-brown rice)
Vegan comfort food!
This is so easy and nostalgic for me.
Sauté 1 clove of garlic and one onion in olive oil, salt and pepper till golden, then throw in the peas, (I used frozen, organic) and cook on low until the peas are soft and the consistency is all blended well, almost caramelized.
When the pasta is al dente and strained well, add to the mix and stir till it's evenly distributed.
