Roasted Sweet Potatoes with Stewed Chick Peas
This recipe is more like a 2-for-1. 2 recipes combined in one delicious dish!
This chickpea "stew" is something that my stepfather created many many years ago and called it "chickpeas with sauce."
At the time, combining the two seemed a bit odd, but now it's a really popular dish that I see everywhere! It has also been a staple of mine for over 10 years now! And there are so many ways to modify it.
His version was a simple Italian way, chickpeas cooked in smooth tomato sauce with sauteed garlic, poured over some rice.
I still make this version all the time, but I have vamped it up for when I meal prep for clients.
I am a huge fan of keeping things simple so here's the new and improved version that I have been making. It's loaded with vitamins and nutrients and is incredibly healing for the digestive tract.
What you'll need:
18oz fresh or canned chunky tomato sauce
12- 15oz cooked chickpeas (canned is ok)
3 cloves of garlic
1 peeled and chopped shallot
a few glugs of olive oil
1 teaspoon of turmeric
1 tablesoon of nutrition yeast
1 tablespoon of coconut cream
A few brussel sprouts for shaving
Now here's the how to:
Smash and chop the garlic and start sauteeing it in olive oil and sea salt, next throw in the chopped shallot. Sautee this on medium to get things going. Sautee until light golden brown.
Next add in the tomato sauce and the tablespoon of coconut cream, the turmeric and the nutritional yeast. Stir it up and when it starts to bubble, lower the tempature, add the chick peas and add a touch more salt. Cover and let it cook for about 15 - 20 minutes, stirring occasionally.
Have some roasted sweet potatoes ready!
Here is a simple recipe;
Rinse and chop sweet potatoes, lay them in parchment paper with sea salt and (optional) coconut oil. Roast on 420 for 30 mins.
OK so when the chick peas are done, use them as a base, and pour some sweet potatoes on top!
I love to add some green by shaving some raw brussel sprouts on top!
