The Best Coconut Bacon
Coconut "bacon" ? What?!
YES! I know, I know, bacon is good but what it does to your body isn't. Plus, saving a cute little pig is always a win!
There are tons of bacon alternatives but I felt like making my own.. I searched the internet far and wide and I experimented A LOT so you don't have to!
I introduce to you, The Best Coconut Bacon...I took my favorite parts of all of the recipes that I found and created the ultimate recipe. The taste, the crunch, it's perfect. Plus it's extremely easy to make, probably even less time than making pork bacon.
What you'll need:
2 cups large unsweetened coconut flakes (not shredded coconut)
2 tablespoons olive oil
2 1/2 tablespoons liquid aminos
1 teaspoon liquid smoke
1 teaspoon maple syrup
After it's layed out:
5 shakes of paprika
2 pinches of sea salt
Preheat oven to 350°F.
In a medium bowl, gently mix all ingredients until the coconut is coated.
Spread the coconut in a thin, even layer then top with 5 shakes of paprika and 2 pinches of sea salt. Bake 10 to 14 minutes, stirring once and flipping them halfway through, watching carefully towards the end of the cooking time to ensure that it doesn't burn. Remove when bacon is browned and allow to cool. The bacon will crisp up as it cools. Eat immediately, or store leftovers in a sealed glass container.
The biggest challenge is to not eat the entire thing in one sitting!
